A space tailor-made to express Japanese culture through sake
Hasegawa Eiga Roppongi in Tokyo normally operates as a select shop for sake and sake accoutrement. It represents the flagship brand of Yaegaki Brewing, a 350-year-old brewery in Himeji, Hyogo, to showcase the wonders of Japanese sake brewing and express the beauty of Japanese culture.
Yaegaki’s Hasegawa Eiga brand sake greets you at the entrance alongside a matched display of beautiful sake cups. Open the sliding door to the rear area of the store and find a cozy, chic tatami room that stands in contrast to the rest of the store’s all-white interior. This is the special private space you can rent out for this experience.
Original cups and other rarities created for Eiga Hasegawa
First, feast your eyes on the five elegant sake cups arranged before you, made for Hasegawa Eiga by two ceramics artists: Tsuyoshi Hotate, whose work is featured in museum collections, and Ryuji Iwasaki, whose work has recently garnered attention for its creative and diverse mixed-technique worldview. Each of the five cups have been devised to bring out the aroma and taste of its paired variety of Hasegawa Eiga sake.
The paired bites for the sake are curated by Takashi Ozawa, head chef and owner of Ginza Wakyo. His restaurant has made a splash for its creative reinterpretations of Japanese cuisine. The pairing menu changes with the seasons, allowing you the richest possible tasting experience.
Savor the flavor of the finest fervently fashioned sake
The tasting commences with the pouring. Hasegawa Eiga brims with the passion and dedication of its creators, who spent three years perfecting it before commercialization. They say that large-scale production remains a challenge for their handmade methods which forego machines and insistence on techniques that do not cause the living yeast undue stress. In this experience, knowledgeable staff will tell you their story, and the story of each sake.
Water has an outsized influence on the quality of finished sake. Hasegawa Eiga uses only well water from the underground reservoirs of the Hayashida River, a tributary of Hyogo Prefecture’s Ibo River. No machinery is used to squeeze the finished sake from the fermented moromi pulp. It is this painstaking process which maintains the flawless, unadulterated flavors of the brand.
Hasegawa Eiga’s five varieties are brewed entirely from the same rice, but each nonetheless offers a distinctive aroma and flavor to enjoy. Learning about the special methods involved in producing these characteristics will deepen your appreciation for, and the labor behind, each finished product.
