Haku Kyoto Cuisine is a luxurious ryotei (Japanese-style restaurant) standing on the banks of the Kamo River at the iconic Sanjo Ohashi Bridge—a symbolic waterway in Kyoto. Accessible through a narrow stone-paved path, the atmospheric building holds historical significance, believed to be a gathering spot for warriors during the tumultuous Bakumatsu period (the end of the Edo period), marking Japan's transition from isolation to interaction with foreign nations in the late 19th century.

Steeped in samurai history, it now operates as an exclusive ryotei frequented by discerning patrons, both domestic and international. Celebrated for its seasonal culinary offerings blending modern interpretations with traditional Japanese flavors, it remains a well-kept secret among a select few.

"Inei Raisan" describes a unique Japanese aesthetic that focuses on the beauty of scenes created by the interplay of light and shadow. The softly illuminated pathway guiding you to a private room overlooking the serene tsuboniwa garden epitomizes this philosophy. Here, the gentle trickle of water in the pond, graceful carp leisurely gliding through the water, and the camellia blossoms adorning its banks exemplify the beauty of a Japanese garden.

This tsuboniwa garden was designed by Kazuyuki Ishihara, a world-renowned garden designer. Ishihara boasts accolades from prestigious events like the Beijing Expo 2019 and the Chelsea Flower Show in England. Normally reserved for hosting special guests, this private room offers a rare opportunity for a relaxed and unhurried appreciation of the garden's beauty.

In addition, hanging in the alcove of the room is a calligraphy piece by Shinsaku Takasugi, a key figure in Japanese history. This calligraphy, a gift to a former ally despite their falling-out, reflects Takasugi's forgiving nature, with words expressing reconciliation: "Though paths diverge, our roots remain intertwined." Following the guided tour, indulge in a Kyoto-style kaiseki or Kobe beef sukiyaki feast within a room with views of a tsuboniwa garden. 
Available on Friday and Saturday, the carefully curated Kyo-kaiseki menu features only seasonal ingredients, promising a culinary experience that evolves with the seasons. Crafted by a talented young chef honed under the guidance of a prominent figure in Japanese cuisine at a renowned ryokan (Japanese inn), this menu showcases the chef's award-winning expertise, delivering the finest culinary creations.

Each dish is filled with the chef's passion

The kaiseki course will incorporate seasonal ingredients at their prime. For example, in early winter, the menu features exclusive delicacies unique to this place, like the rare Seko and Matsuba crabs, three-year torafugu (tiger pufferfish) from Awaji Island, Wakayama lobster, and Tamba Sasayama’s botan-nabe (wild boar meat hot pot). Kaiseki courses typically offer around eight dishes, and the contents vary depending on the season.

From Sunday to Thursday, enjoy sukiyaki made with Kobe beef, a world-renowned Japanese delicacy. This premium marbled beef melts when heated, and has an exceptionally tender texture. Kobe beef's history dates back to the late 19th century, when beef first became part of the Japanese diet. Foreigners visiting Kobe were so impressed by its taste that they introduced it to the world as "Kobe beef."

Following the meal, you will head to the on-site bar ICHIE—typically off-limits to the public—for dessert. This space features traditional clay walls, a popular Japanese architectural feature for centuries. Crafted by skilled artisans, these walls exude a rustic yet refined ambiance. The bar counter proudly showcases a curated selection of renowned sake, attracting VIP patrons from Japan and beyond.

Haku Kyoto Cuisine is a luxurious ryotei standing on the banks of the Kamo River in Kyoto's Kiyamachi district. The building was the residence of Takechi Hanpeita, a Bakumatsu-era samurai known for instructing Sakamoto Ryoma in swordsmanship. Inside the establishment, remnants of an Edo-period box staircase persist, along with rooms adorned with hanging scrolls of Sakamoto Ryoma and Fukuzawa Yukichi, evoking a sense of history throughout. Known for its innovative kaiseki cuisine utilizing locally sourced ingredients, the establishment offers a luxurious experience overlooking the Kamo River and a tsuboniwa garden created by the world-renowned garden designer Kazuyuki Ishihara.
